The fruit cake for those who don't like fruit cake!!
Grandma Millie's Fruit Cake (My Dads mom)
5 large eggs
2 sticks butter
1 cup granulated sugar
1 3/4 cups flour
1/2 tsp baking powder
3/4 pound candied cherries
1 pound candied pineapple
1/2 ounce vanilla extract
1/2 ounce lemon extract
4 cups chopped pecans
cream butter and sugar together until light and fluffy, add eggs one at a time and mix well. Mix flour and baking powder together and add to the butter mixture. Add vanilla and lemon. Then add fruit and nuts and mix well.
Grease a 10 inch tube or bundt pan and pour the batter into the pan.
Place the fruit cake into a cold oven and then set the temp to 250 degrees and bake for 3 hours.
Cool completely in the pan about 30 min before flipping it and removing the pan.
Wrap the cake with cheesecloth then sprinkle with fruit juice, brandy, rum or wine then wrap with foil and place in an airtight container.
The cake can be aged 3 to 4 weeks but I have eaten the cake many times with out the fruit juice or alcohol and the next day after baking and I loved it both ways.

I love fruit cake, but I think I'd like this recipe even better. It's for those of us who hate that bitter citron or whatever it is that is usually in fruitcake. This looks and sounds delish!
